Food Service Director
Responsible for the ordering, cooking, general preparation, and overall maintenance of the kitchen operation. Responsible for training and supervising all kitchen crew members and maintaining a positive kitchen environment.
Responsibilities
-
Order provisions based on menu and inventory needs.
-
Meet or exceed budgetary goals while providing healthy and delicious meals three times daily.
-
Check incoming food and supplies from food service distributor for appropriate quantities and quality.
-
Prepare and serve food at each meal with assistance from the kitchen crew.
-
Work with counselors on out of traditionally scheduled meal requests, snacks, etc.
-
Aid in ordering and preparing meals and snacks for those with dietary restrictions.
-
Advise Camp Administration concerning meal changes, use of leftovers, and other related problems.
-
Assist in training and work with kitchen crew members on cleanliness procedures and clean-up areas and duties.
-
Provide feedback for written evaluations of kitchen crew at the end of their contractual first and final weeks.

Maintain a positive attitude and build an inclusive, nurturing work environment for all.

Operate kitchen in compliance with State and A.C.A. codes ensuring overall kitchen cleanliness.

Maintain professional appearance, attitude and demeanor for duration of employment.

Other job-related duties as may be necessary to carry out the responsibilities of this position.

Maintain camper's wellbeing and safety when in public or working with public providers.

All Support Staff are highly involved with the camper experience throughout their contracted stay at Camp Manitou. This involves supporting counselors in varying activity areas and evening activities, as well as responsibility for the care and wellbeing of all campers.

Qualifications- Required

Upon hire, obtain certifications in CPR/AED/First Aid & ServSafe Food Manager Certification
Qualifications- Preferred

Recommended to be 21 years of age

Prior experience working in food preparation

Knowledge of kitchen operating procedures and food handling and storage

Lifeguard Certification

Boaters safety certification
-
Exemplary driving record with a commitment to take vehicle safety course at camp in order to drive camp vehicles
Assistant Food Service Director

Dietary Specialist

Responsibilities:

Plan a menu that is similar to the all camp menu for each differing dietary need.

Work with the Food Service Director and Assistant Director to ensure needed provisions are ordered.

Check incoming food and supplies from the food service distributor for appropriate quantities and quality.

Prepare and serve dietary foods at each meal with assistance from the kitchen staff to meet all dietary needs and eliminate all cross contamination.

Work with counselors on out of camp meal requests, snacks, etc.

Work with Health Supervisors to learn about upcoming dietary needs for campers and staff and how to best accommodate.

Follow all cleanliness and safety procedures and clean-up areas used.
